Gervasi Destinations is excited to officially announce the name of its newest restaurant concept opening at The Marketplace at Nobles Pond: OLINDA – Modern Plates + Pours.

OLINDA will bring a fresh, stylish dining experience to the community, featuring a modern menu of shareable plates, chef-inspired entrées, and artfully crafted cocktails. Designed to be both lively and inviting, OLINDA will offer a chic casual atmosphere that blends contemporary design with the warmth and hospitality guests have come to expect from Gervasi Destinations.

OLINDA is our toast to the beauty of gathering. Named in honor of Gervasi matriarch Linda Swaldo, the name is derived from the Portuguese translation “Oh, Beautiful.” It reflects both the elegance of the space and the warmth of the experience. Stylish yet personal, OLINDA speaks to a celebration of togetherness while serving as a meaningful tribute to family.

OLINDA is set to open in 2026

The Executive Sous Chef is responsible for the preparation and production of all food for all regular dining and events hosted in outlet while working kitchen support management shifts. Directly support Outlet Executive Chef, including but not limited to; ordering, training, operational process controls/specs, cost management, and quality control.

Executive Sous Chef duties and responsibilities:

  • Prepare all food items according to standardized menu recipes and/or as specified on BEO. Check to ensure consistency of product.
  • Labeling and stocking all ingredients in storage areas so they can be organized and easily accessible.
  • Keep all refrigeration, storage and working areas in clean, working conditions to comply with Health Department regulations.
  • Ensure all equipment in working areas is clean and in proper working condition.
  • Support development of specs and quality control process across within with outlet.
  • Collaborate with Executive Chef to update menus and develop features.
  • Support training kitchen staff on proper food preparation techniques and food safety procedures.
  • Support food preparation methods and advise adjustments as needed to increase efficiency or quality of output
  • Support F&B Director and outlet Executive Chef with HR issues as needed.
  • Ensure high standards of quality and sanitation are maintained in all areas of the kitchen. Confirm adherence to safety guidelines.

Executive Sous Chef requirements:

  • Qualifications: 2+ years of kitchen management experience
  • Full-service restaurant experience necessary
  • Regular attendance in conformance with the standards, which may be established by Gervasi Management team from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.
  • Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the business.
  • Upon employment, all employees are required to fully comply with GV Destination rules and regulations for the safe and efficient operation of restaurant facilities. Employees who violate restaurant/winery rules and regulations will be subject to disciplinary action, up to and including termination of employment.
  • Minimum of 21 years of age.
